As mentioned last night, it was a birthday meal for [livejournal.com profile] raggedy_man, a collaboration between [livejournal.com profile] the_mendicant, [livejournal.com profile] whiskeylover and myself.

Richard's Salmon and Asparagus Terrine

The problem with this gorgeous dish was the texture. Cutting it without an electric knife was just about possible but then transferring the slices to a plate in one piece was basically impossible without losing cohesion. Oh well, it was still very nice to eat.

Stupid me forgot to take a picture of the finished plate so this is one of the making.
Sides were a cheesy potato bake, new potatoes, peas, carrots, baked broccoli and caulliflower and my pepper/feta salad.

I really should have taken a photo of [livejournal.com profile] nekofairy666's plate because it looked the nicest as making the pattern in the yoghurt worked better. It still tasted absolutely fantastic, if I may say so myself. I give myself a 9/10 for taste (the tart berries worked really well with the dark chocolate) but only a 6/10 for presentation. Must try harder next time...

Still, the main objective was achieved: [livejournal.com profile] raggedy_man loved it all. :o)

I'll ask the other two for theirs but my choc mousse is the usual one (http://karohemd.livejournal.com/612062.html). The coulis is just blended raspberries and blackberries.

So you just made the mousse and added the coulis?

It actually looked pretty good in the picture by the way.

Yeah, a "mirror" of cream (the thicker the better, single cream didn't work very well) on the plate, a blob of coulis in the centre and a some more around the edge of the cream mirror and then you take a skewer or other blunt object and draw a pattern through it. It's a lot simpler than it looks. What I would have needed was a piping bag or similar contraption to get an even band of coulis around the edge...

Er, and then just a dollop or two of mousse on top. Again, this should have been a nicely shaped one but the mousse didn't behave. :o(

I could have done better but it would have involved more time and my overcoming my lack of attention to detail.
The problem is, I don't have the space for fancy gadgets I rarely need and [livejournal.com profile] robinbloke's kitchen is woefully underequipped.

maybe it could have better but personally I thought it was fantastic and loved every bit of it. Yet again a wonderful meal from a wondeful friend :-)
