Penne with Aubergine in spicy Tomato Sauce

After still having too many potatoes, onions and carrots, I swapped my organic vegbox for a salad selection which contained a nice aubergine and four big tomatoes.
I sweated off a finely chopped onion and three big finely chopped cloves of garlic in olive oil, added the cubed aubergine, some concentrated tomato puree and two finely sliced pale green chillies (also from Rivernene), filled up with the chopped tomatoes, seasoned with salt, pepper, paprika and dried mixed herbs and let it bubble until nicely reduced.
Boil the pasta, drain, put it in a bowl and garnish with fresh basil and freshly grated parmesan. Yum.
