Ah, apparently making chilli oil as I intended to is a bad idea. The people on food_porn usually know what they're talking about so I'm going to remove the chillies tonight.
Huh. I have made chilli oil in the manner you describe previously and not poisoned anyone -- though I didn't use much of it and wound up using the remainder of the bottle more as a kitchen decoration rather than for food purposes ;)
I've certainly topped up our chilli oil before without having problems - but then I used chilli flakes & whole dried chillies (copying the original ingredients!), whereas they're warning against using fresh ingredients.
