I remember buying my mother a sugar thermometer as a present (and a hint) when I was a small child. I was perplexed by the labels like "hard crack" as well!

It seems to refer to the texture of sugar (http://www.exploratorium.edu/cooking/candy/sugar-stages.html) after it's been molten and again cooled down. At "Hard Crack" it's really brittle and splinters like glass and at "Soft Crack" it's still flexible.
