Mmmm, soup
21 Jan 2008 09:17 pmI don't make soup often because it's usually too much hassle and like to eat things that have a bit more of a texture to it but various veg had accumulated and I don't like cauliflower on its own much so I made a stock (onions, carrots, kale, cauliflower greens, jerusalem artichokes), strained the stock, put in the ja's, the cauliflower florets and half a pint of milk, simmered til the cauli was almost done, added a big handful of chopped spring greens, simmered until those were done, added a crumbled lump of blue cheese and blitzed everything. Rich, creamy and very yummy indeed. I just have too much left over. :o(
