jupiter_jones suggested a gratin with everything (spuds, carrots, courgettes, mushrooms and cabbage) and that's what I did. It didn't quite turn out the way I imagined it (too much milk so it didn't set properly and the potatoes were undercooked despite having been parboiled) but it tasted extremely yummy and didn't look too bad, either:
I'm going to have the leftovers for lunch (and dinner tonight, by the looks of it as well as the leftover cauli curry from Tuesday).
