Sounds grand! I'd go with rare or blue myself, but minor details...
And on the subject of which, why do people these days go to the trouble of specifying "pan" fried? To differentiate it from all those hat-fried, briefcase-fried and coathanger-fried foods we get in these enlightened times?! ;-)
