This week I have pointy green cabbage (not touched yet), two phallic courgettes, a box of portobello shrooms and the usual carrots, spuds and onions.

I was hungry and didn't have much inspiration for something more complicated so I just made a stirfry with one of the courgettes, three carrots, three mushrooms and an onion, served with mashed potato (odd, I know but I have too many spuds to get rid of). Still nice, though, the courgette was absolutely fab, you could have eaten it raw, it was that tender.

With all the potatoes and the gigantic apples to boot, I think I'm going to make Reiberdatschi with apple sauce on Sunday. Will be a first, too. ;o)

I'll post a recipe (and photos) when I made them. I will have to grate the potatoes by hand (as I don't have a nice machine like my mum has) which is a bit of a bummer and I haven't actually tried myself so if the outcome is good, there will be a recipe.

Yes, they will go grey, there's not much you can do about it.
Well, there is a way, but it's not very nice. What my mother used to do was arrange the peeled potatoes in an old pot, place a strip of sulphur paper on a rack inside, light it, and put the lid on. The sulphur will prevent the potatoes from oxidizing but it's purely cosmetic. They will be nicely brown in the pan, anyway.

You're grating them on the fine side (unlike for a Rösti) so would get a very watery soup if you grated them into a bowl of water. You'll have to wrap the grated potato in a teatowel and press out all the water, anyway (unless you have one of those nice potato grating machines that not only grates them but acts like a centrifuge and gets rid of all the water, too).
