Wandered around Tesco's this evening to find something exciting for dinner this evening and spotted some red tilapia at the fishmongers. They looked and smelt fresh so I bought one.
I just stuffed it with garlic and parsley, pan fried it and had some new potatoes (first boiled then sauteed in the fish juices) and a cucumber salad with it.
Very simple and very nice.

You surely missed the epilogue to the above post....

I love cooking fish but the flat reeks of the smell for days after which tends to deter me from doing it often.

First, I live on my own, in a tiny but self-contained studio and secondly, the fish was fresh, i.e. it didn't smell. If it had smelt, I wouldn't have bought it.

I love cooking but only have time to do something special on weekends. During the week it's not more than some pasta with pesto or a quick home-made sauce. More often I will only have a sandwich and eat a ready-meal at work or pop across the road to the pub for lunch.

Ditto - I've found that fresh pasta sauce is a god send. Really quick and easy, very little hassle, and scrumptious. And being the heathen I am, I love fresh pasta too. An ex of mine introduced me to the concept of it some years ago, and it still makes me think of him... :-)
