Sometimes I surprise myself
28 Sep 2003 10:39 pmMade a very quick, very simple and at the same time absolutely gorgeous dinner tonight. Well, maybe a bit posh.
Pasta in a porcini mushroom cream sauce.
Ingredients:
- pack of dried porcini mushrooms
- cup (250ml) of double cream
- pasta of your choice
Method:
Rehydrate the mushrooms according to the instructions and keep the liquid.
While the pasta cooks, put a knob of butter into a frying pan and sauté the drained mushrooms a couple of minutes, reduce the heat and fill up with double cream stirring constantly. Add most of the mushroom liquid, season with a little salt and pepper and reduce until you have a nice consistency.
Just before serving, add a handful of chopped fresh parsley.
Gorgeous.
