Just made a very simple veg stir fry/fried rice with loads of garlic and fresh ginger, a pack of Tesco's stir fry veg (because I'm lazy) and a finely sliced green pepper, seasoned only with dark soy sauce, pepper, a dash of tabasco and sesame oil. Took all of five minutes to make (plus the cooking time for the rice) and there's enough left over for lunch tomorrow, too.

Especially with bulk food (as opposed to, say, a steak) I usually make enough to last the next day, too.
It's one of my NY resolutions to cook more. It's cheaper AND healthier and usually tastes better than readymeals, too. If I can get the time management sorted, I'll be able to do it.
