Food added to my eaten list during this holiday

Catfish, crawfish, alligator, black drumfish, andouille sausage, gumbo, real jambalaya, bisque, etouffe, beignets, and other things.
I wanted to buy a cookbook but didn't have the luggage space.

It was food made in heaven.

I'm debating finding and testing some recipes and making a vegetarian gumbo and jambalaya for my birthday party rather than the various pasta I wanted to make.
Shame I didn't have more luggage space or I would have bought a cookbook and some spices/sauces and things.

Alligator is a bit strange, rather rubbery and boring but at least I can now say I had some. :o)

...I am curious. Its a given that people in Louisiana will cook anything. I've seen them hit pots with a spoon and say 'Yougiddonbackindeah' to whatever tried to get out :)

*laughs* Sounds about right.

To be honest, it was all good. The highlights were the "Oyster Shooters" at Uglesich's and the fine meal at Brigtsen's.
