I think the "I'm a doctor, not a ..." is in almost every other episode, just like "He's dead, Jim". ;o) My favourite is still "I'm a doctor, not a bricklayer" from "The Devil in the Dark".
He really says bricklayer?? I remember his explosive exclamation "For God's sake, Jim, I'm a doctor not a miracle-worker" - I think it's the movie Wrath of Khan.
