This was the starter my mum made for our Christmas Day lunch (main was a huge roast haunch of venison and dessert was a choc mousse with raspberries):

I was very impressed. Mum's cooking is very yummy but usually not that photogenic (hence no photos of the other courses). It was a recipe from a TV show, I think. Inside is a mix of cream cheese, chopped salmon and herbs. The whole thing got completely squashed once you tried to cut into it because of the squishy filling.

fry some chopped streaky bacon in a little olive oil until crispy and toss the field salad (lamb's lettuce) in the pan until warm and wilted a little.

Aha, that was the bit I was stuck on. I was wondering if "field salad" was the name given to a particular mix of leaves, or something.

The German "Feldsalat" is a distinct variety (Valerianella locusta) but there seem to be a variety of English names for it, "field salad" being one of the minor ones. I've seen and heard "lamb's lettuce" before but "corn salad" is unknown to me (might be US usage). I'm quite sure it's one of those names that vary from region to region.

If [livejournal.com profile] cabd reads this, I'm sure he'll tell us the proper name. If there's one person on my f-list who knows about these things, it's him. ;o)

I had swordfish with wilted spinach the other day and it was sensational. I think wilted leaves work really well with fish.
